200ml fresh lemon juice
500g fine sugar

To make the Cocktail (makes 850ml, to serve 10)

Making the Cordial: Put all the items inside a pot, bring to a gentle boil, agitating until the sugar dissolves. Then, turn off the stove allowing it to cool fully. Decant into a sterilised bottle, close it and store in the fridge, where it will keep for about a month.

Preparing the Batch Mix: Mix all the liquids into one sizeable container, allow it to infuse for one hour, then strain , ideally through muslin, so it's perfectly clear.

When ready to serve: Add 85ml from the batch mix into your stirring glass packed with ice, and stir lightly for about 60 seconds until cold. Pour into an chilled martini glass or similar, garnish with a few cranberries adding the final touch with a brief mist with the mandarin essence over the drink.
